Grilled Veggie Naan

How It's done:
Ingredients
1 zucchini
2 capsicums (1 red, 1 yellow)
1/2 red onion
1/2 cup mushrooms
2 tbsp, olive oil for roasting
2 naan breads
1/2 cup hummus (store-bought is fine)
Handful feta cheese
Fresh herbs for topping
Salt & pepper to taste
Instructions
Preheat the oven to 200 degrees °c. Toss veggies in olive oil, salt & pepper & roast for 20-25 minutes (until cooked through). Warm the naan, spread with hummus & top with roasted vegetables, feta & fresh herbs.
