Easy Peasy Tzatziki Dip

How It's done:


2 cups cucumber, unpeeled, grated & moisture squeezed out
1/2 cup plain greek yoghurt
2 tablespoons EVOO
2 tablespoons chopped fresh mint
1 tablespoon chopped fresh dill
1 tablespoon lemon juice
1 1/2 teaspoon salt


In a medium bowl, add the squeezed cucumber, yoghurt, herbs, lemon juice, EVOO, garlic, and salt and stir well to combine. Allow to sit in the fridge for 20 mins so the flavours can mix through the yoghurt before serving.
