Easy Greek Chickpea Salad

How It's done:


1 440g can of chickpeas, rinsed and drained
1 red capsicum, chopped
1 yellow capsicum, chopped
1/2 red onion, diced
1 cup red cherry tomatoes, halved
1 cup yellow cherry tomatoes, halved
1/3 cup kalamata olives, pitted
1 medium cucumber, sliced
100g feta cheese, crumbled


2 tablespoons olive oil
2 tablespoons lemon juice, freshly squeezed
1 clove of garlic, peeled and minced
1 teaspoon dried oregano
Salt and pepper to taste


Combine all salad ingredients in a large bowl. Mix all dressing ingredients together in a smaller bowl, pour onto salad, and toss to ensure all of the salad is covered. Add salt and pepper to serve.
