Creamy Spinach Bruschetta

How It's done:

Ingredients

Crusty bread
200g cream cheese
5 cups packed baby spinach
2 cloves garlic, peeled and finely chopped
1/4 cup parmesan cheese, grated
1/4 cup mayonnaise
1/4 tsp freshly ground pepper
Mozzarella cheese for topping

Instructions

Heat oven to 160 degrees Celsius. In a medium bowl, combine baby spinach, mayonnaise, and parmesan cheese, softened cream cheese, garlic and pepper. Fold through to combine. Place spoonfuls of the mixture onto slices of bread. Top with mozzarella and place on a baking tray. Bake 8-10 minutes or until the cheese has melted. Serve immediately.
