Chilled Cucumber & Walnut Soup

How It's done:


1/2 cup walnuts
2 cups plain yoghurt (not greek yoghurt)
3 radishes, washed and thinly sliced
1 1/2 cups filtered ice water
1/2 cucumber, finely chopped, plus extra slices for serving
1 cup chopped fresh herbs (dill, parsley, basil, mint)
3/4 tsp sumac
Salt and pepper to taste


Lightly roast walnuts on the stovetop, allow to cool before finely chopping and set aside. Whisk yoghurt and iced water together in a large bowl. Add chopped cucumbers, herbs, and toasted walnuts. Season with sumac, salt, and pepper and chill hour. When ready, sprinkle additional sumac on top and add cucumber and radish slices to serve.
