Cheese, Leek & Chicken Pie


How It's done:


500g chicken breast fillets, shredded
4 sheets of shortcrust pastry
1/2 cup mushrooms, sliced
1/2 cup light cheese
1 Leek, finely sliced
2 eggs, lightly beaten
1 Tbsp olive oil
1/2 cup light cream
Salt and pepper to taste


Preheat the oven to 200 degrees Celsius. On the stovetop, add olive oil to a frying pan and heat before adding leek and mushrooms, cooking for 2-3 mins or until they soften. Add chicken and cook until chicken browns, then add the cream. Reduce the heat and cook for 3 mins. Remove from the heat and set aside to cool. Place pastry sheets inside a muffin tray or small pie tins and cut to fit. Add cheese and beaten eggs through the cooled chicken and cream mixture, placing spoonfuls of the mixture into the pie tins. Cook for 15-20 mins or until the pastry is golden brown and the pies are cooked through.
