Beetroot & Citrus Salad

How It's done:


2 cups mixed leafy greens
1/2 beetroot, peeled and thinly sliced
1 orange, peeled and segmented
1/2 grapefruit, peeled and segmented
3 radishes, thinly sliced
2 tablespoons organic goat's cheese
1/2 cup walnuts, roughly chopped
2 tablespoons olive oil
2 tablespoons lemon juice
1 tablespoon organic honey
Salt and pepper to taste


In a bowl, whisk together olive oil, lemon juice, honey and salt and pepper; set aside as a dressing. In a separate bowl, gently combine all remaining ingredients. Drizzle with dressing to serve.
